Car always jerks when shifting when pushing it...
its one of 3 things,
your engine mounts could be worn out.
your transmission and/or transfercase mounts could be worn out.
your rear differential mounts could be worn out.
if you change all of those mounts with new oem or upgraded bushings you'll notice a huge difference in shifting.

I jus re-read your first post. If you know how to shift fast in fwd cars at redline, then you know how to shift an Evo fast, it's the same thing. Don't worry about the drive train it can take it.
well since youre dumping the clutch theres that huge "thud" from the rear diff most likely kicking you and making it jerk. At WOT when i shift i dont wait between gears for one and at the same time i quickly rev match and blip the throttle than i let it ride off my clutch for a SPLIT second so that itll be smooth transaction than mash the gas once its smoothly in gear and the rpms are even. I find this the best way to "smoothly" WOT but in my friends 350z and such theres no clutch riding necessary to smoothly shift so its def diff since your coming from 2 wheel drive cars
You're over analysing things. Just try and drive it normally, without trying to be "nice" to it till you get the hang of it, and then you can try and get quicker with your shifts. Taking your time between shifts/nana-ing it about is just going to make it harder to learn what works/what doesn't, so it's just making things worse.
They're solidly built, they can take a bit of a beating, you're not going to hurt it by driving normally. No point having a performance car if you're afraid to use it - that's how I see it anyways.

Generally when you hear banging while your shifting your rpms are not matching up when you shift into the next gear. when you running up through the gears, like in all cars, shifting fast will be as simple as driving slowly. I just press the clutch and shift the gear nearly as fast as i can, and it's very smooth when the clutch is dumped because the rpms will match what they will be in the next gear. The rpms will drop perfectly when you shift at a normal fast speed, and will make going through the gears very easy. 2-3 second shifts will be causing your banging noises because the rpms will be much to low when your shifting into the next gear.
