The reason they dont do it is because you want the least amount of friction within the sleeve of the throttle cable. Doing so can lead to the throttle sticking or rough pedal feel. I personally don't care unless I were to do a full wire tuck

I just did this 2 days ago and havent had any problem. Actually saw it on an Evo that had it done since he bought the car 2 years ago. Kinda funny cause 2 of my friends said that was the best thing i have done under the hood???
There is no issue with the bend radious of a tucked throttle. The bend will make the throttle a little less smooth then it comes from the factory though but IMHO, it can only be noticed if you go back and forth between two cars. You will only wind up with a high idle and sticking throttle if you managed to put a kink in the cable when it was rerouted. Basically, you need to make sure that there is no stress on it when it is repositioned.
You have to tuck it in a way that keeps the cable as smooth possible. You have to keep the bends soft, and smooth. If you try to tuck it out of visibility completely, you will have issues with it. I've had mine tucked for about a thousand miles now, no issues at all. Car feels just the same. You just have to think about it when you do it. Make sure you don't tuck it too much...
