^ Contact your insurance company first before taking anything off. Make sure it's ok to....otherwise they should refer you to a shop that they work with for a quote on the repairs.

Typically they will cut the check made out to both you and the shop that is going to be doing the work, I dont know if they would cut a check to you directly so doing all the work yourself may be out of the question but that would be the first step in finding out, simply ask them if the check will be cut to you only and if they could do it or to you and a shop.
Typically any shop will work with you to put the parts that you want on it and if you save money the balance is yours.
what is up with people nowadays my evo was hit in the parking lot yesterday while i was at work... and of course they left... but as stupid as they were to leave they parked in the next parking lot and a person sitting by my car was eating with his wife in his car and saw the whole thing followed them and took pics and got their license plate so hopefully the police will pay them a visit but according to police the person will say "i didnt know i hit him" and the police can only tell them to call insurance and its his choice if he does or not and insurance told me unless he claims it then im screwed and would have to pay my deductible...

You should demand to speak to a superior unless they summon the person who hit your car AND the person who witnessed it if you got their info or know who they are and do a flat out visual on it that would show without a doubt that the car hit you.
The witness is pretty much key but the visual damage matching will help too because there has probably been some paint swapping.
