You have to post a pic of this!!! Sick! Instead of raising the ride height to prevent rubbing, you may want to consider rolling the fenders (if this would fix the problem).

Well I just put on the 17 x 10's (25mm) with new 710's (275's) on them.

Low and behold, front and rear fit with NO spacers and No fender rolling!
I think the 25mm offset was correct because it pushed everything out
away from the trailing arms and the springs.

Now for the real test: On Sunday I'll take them out for a 20 minute heat cycle
session on the turnpike and do a few hard turns to see what happens.

I suspect there might be a little rubbing from the fenders on the outside of the tires.
If that's the case maybe I could just raise the car 1/2" - 3/4" with my coilovers.
