I have the tein s-type springs on my evo and want to know what is the largest size tire that willl fit without any rub. I want 255/40/17. Will those fit?

Yes.

I run that size on swift springs on my summer setup without issues. It works on the stock wheel or on 17x9 as long as you stay with a 30+ or higher offset.
