ECUFlash removing tables from ecu

Lets say i flashed my ecu with ROM A and for arguments sake it had the table High OCT fuel map with edited values. Now I flashed ROM B but it didnt have the table High OCT fuel map would ROM A's values still be flashed to my ECU?

What ever rom is flashed is what will be on ecu.

Are you speaking of the fuel map?

i used the fuel map as an example. Ok so lets say ROM A is my current ECU map, this rom is tuned and has a total of 28 editable tables that are all modified. Now i want to make my car stock again, so i go and download a stock rom. Stock rom has only 18 editable tables. Will the Stock Rom completely override the ECU or will the address on my ECU still have the tuned values from original mapping?

Haha I've already bricked it before... Hence why I'm asking because I had to flash a usdm rom on my ecu but I have a audm evo x. Fixed it though. But I was having limps on the usdm rom so I flashed a jdm lol still was having problems but I found that edm is the same as audm and it's now all good.
