I just had the opposite happen to me this weekend. I wanted to see where my 1000 CC injectors would max at with my 6262. So before I did my pump tune I had Bryan tune my car on E85 with DW 1000cc and a single in tank walbro 255. We could only make 408 before the injectors were maxed. On my turbo that was only 20 lbs. The pump still had more in it. But we did stop at 98% duty cycle to maintain a buffer.
I'm running DW 1000's on E85 on the stock turbo @ around 80% IDC (375hp/400tq on a mustang dyno).
I have a 255 in the tank feeding a surge tank that feeds another 255 that feeds the rail.

If you look at the flow info that came with your injectors you'll discover that they aren't actually 1000's. DW1000's, for example, often flow at 1040 or 1050.

I agree E85 takes a lot of fuel.. the only reason I would run 800cc injectors right now is because I have an accessport. and an off the shelf map will suffice right now.. The way I look at it is I can gain about 50hp for $360(injectors) $385(ams fuel kit) and minimal effort in labor..
Then in 3-6 months or so I'll be doing cams, turbo, (bigger injectors.. Selling old ones) along with clutch and AMS or Buschur E85 tune.
Unless someone knows how to modify the cobb off the shelf E85 map for bigger injectors?..! All I'd have to do is change the injector scaling and latency, but to what and how on an AP?

Your plan seems reasonable in the short term, but speaking as someone that's done that plan, it SUCKS and costs you money.
