I’m trying to buy a intercooler but not sure what size to buy For a stock gram turbo? 3 in or 4 in sheep’s built intercooler?

If you are on a stock frame turbo I would probably do a 3.5" intercooler. I ran that from a stock turbo up to a turbo kit at 650WHP and it works great!
