Coming from the stance scene I know how you feel haha. If you really wana go bags Airrex struts with Accuair management would be ideal (I've seen some at the track and they be smashing). Personally I wouldn't bag my Evo just cause I go mountain driving alot, but I would say it's a pretty practical thing to do if you go to shows/meets alot
People wonder why the car scene is full of uneducated "enthusiasts"... and why the forums are dying. No one is willing to give an actual answer from true life experiences with a product. People would rather bash, rag on and trash talk to people when they have nothing constructive to actually say. I honestly don't mind somebody throwing their OPINION in there, but at least give advice on the question asked as well.
Example:
If the OP's main concern is spirited driving, and there is a chance you may eventually do some track days, then go coilovers. If your main concern is dropping the car to the ground when you park it, you have to go bags. That being said (opinion part) bags are for ****! LOL kidding. I would never do bags because my main focus is make the car handle the best it can at the track but if you are into the hella low scene then you already know your choice. It's not like it will handle like a Prius with bags, you could still track the car and still go decently fast but coilovers will make that happen easier I think.
As for coilovers if you want to go cheap, there is BC Racing. If you want higher quality there are Ohlins and JRZ.

i had air on my mk6 gti with a k04 & water meth, it handled fine, held up to a track day or two, couple days at the drag strip.
- do what you want, if you look air has come a long way since bagging out the 94' tacoma on universal bags that with makeshift brackets. as long as you properly install & torque everything & check your components every once and a while i see no issue.

Only thing that sucks about them is you can't see them when they are on the car! They are so beautiful you just want to keep looking at them.
Im ordering Air Lift Performance for mine just due to the cost. Airrex, Accuair and some of the bigger names are $6K+. Air ride has come a long way and for people to think it is just for show cars is silly. Air ride technologies has an annual auto x at their big show and all the cars have air ride...
For me, I like to drive my car hard but then also ride slammed so air is the perfect setup for me. It is all about what you want do do. It is your car, your money and at the end of the day it is only your decision that matters.

I say go for it. I can't personally stand the stanced look but if you're going to ride around at a height with proper suspension geometry you should be able to get good performance out of an air ride kit. Check out Air Lift. I think they've proven that, while you won't win a racing series, you can make a car handle with air suspension. It won't be cheap but you can achieve your goal of "hard parking" at meets!
