A good beater to learn stick on is a 2007 C6 ZO6 :P . Either that or just go to your local classifieds, pick out a car under $1k, make sure it's manual, and buy it. Forget about "resale value" at that level, because it's either NIL or you can actually make money selling it for a little more than you bought it.
Also, when you buy your Evo, the clutch isn't the only thing that you'll need to potentially spend some money on, a major consideration if money's tight. OEM tires are used up relatively quickly as well as brake pads, and those 2 things together cost basically as much as a clutch to replace. Also, regular maintenance with premium lubricants is essential, etc...

Evo is a bit harder to learn stick on because of the AWD. I learned on a 1987 Ram 50, 5 speed. Cost my dad about 400 dollars than another 400 for the paint job, great little truck. At the time i was only 15 and was not supposed to be driving, but you know teenagers.
