I don't have experience with EVOs - Yet, but I do know about brakes. Brake pads seem to be very subjective. They all have different cf fiction at different temperatures. How do you plan to use the car? Just street? Autocross? Drag? For just street, Porterfield R4-S are great. Little dust and lots of fiction. For autocross, Hawks are good although they make lots of dust and noise, especially the HP+. I tried the Hawk HPS, but did not like them at all. I had them on my M3 for two weeks and sent them back. No bite. EBC Red Stuff would be fine for only street, but the R4-S are a better dual-purpose pad - in my opinion.

the shims would work fine, once the shims are for the respective caliper, you would have no problem since all pad frames for the evo calipers are the same so another manufacturer's shim would work on another brand pad

Why do u need aftermarket shims in the first place?????? Why not reuse the oem one, just clean it up and you'll be good to go. Im using the same pads and running on stock shims and not a single squeal after 2k miles

Use the OEM shims unless you are road racing, only then will you need to go Ti shims to help dissapate heat.
