I have oil temp and oil press in addition to my boost and afr. Prob would have gone with water temp if i were to have added another. what do you use the car for and how extensive are your modifications? oil pressure is a good choice for any setup...the other 2 u may want to cater to how hard u drive the car and the aggressiveness of ur setup.

get oil pressure, fuel pressure and EGT. all three are very important to have on a modified turbo cars

the other gauges you listed are useless or unneeded

I would say get oil pressure, fuel pressure ,and EGT...like others have said. That said, is there a nice off the shelf solution out there that would be like the R35 GTR system? It's the navigation, Stereo head unit, and multiple and configurable gauge display all in one nice clean unit!

Are there any setups that mount by the factory gauges like behind the steering wheel that dont hide the stock tach and speedo?

not really. when you run gauges on the steering colum, they are most likely going to block part of the speedo or tach.

nothing you cant live with tho, i have 2 mounted on the steering colum and can still see everything thats important

Do you have any picture of that by chance? I would be real interested to see how it looks.

I have defi (volt/oil temp/oil press/boost/egt) and aem (wideband). I will be adding an aem fuel press and turbosmart eboost2. However, I am thinking about removing the volt egt and boost.
