Evo VIII/IX handling vs all
This question is nearly impossible to answer. "Handling" is a purely subjective term and any comments on handling must come from someone who has driven every car on your list. There isn't really an objective means of measuring handling.
While you could compare the skidpad numbers, track times, and other metrics of all the cars on your list, you would still come away with an incomplete picture. There are just far too many variables with the primary being the tires.
Handling is a measure of how the car "feels." Roadholding is an objective measure that can be quantified on the skidpad. Sheer speed and track prowess boil down to lap times.
One may argue that the E36 M3 doesn't "handle" well because the steering rack ratio isn't tight enough. The same argument could be made for why the Evo "handles" so well: the tight steering rack.
Finally, due to the Evo being a much newer car than most on your list it will have a drastically stiffer chassis. I wouldn't be surprised if a stock Evo IX MR was able to demolish every car on your list on the track due to:
Tire advancements
Power advantages
Torsional rigidity

I was at high plains raceway here in CO a few weeks ago with a buddy of mine's supercharged 2003 m3 (625hp)
The evo 8 MR did not have a problem passing us. Thing was a beast, except we did catch up on the straight away a little bit. Found out later the MR only had upgraded suspension done to it...

Just hear a lot of people swearing s2k/supras/rx7's out handle the even and in stock form the 8's and 9's don't handle too good and don't have good suspension.
