New to tuning, what to look for?

I'm looking to start tuning my '03 Evo, but I'm not sure exactly what I need to look for. I've got a Zeitronix data logger, so I can see my EGTs, boost, and AFRs.

I've got the simple bolt ons, 3" exhaust with HFC, Walbro pump and 660cc injectors, and an MBC. I'm going to be using ECU flash to make adjustments.

I'd like to run a little more boost than stock (maybe 22-23) on 91 pump gas. I'd consider running more with 100 octane for the track.

So I guess my question is, what should I be looking for when I tune in terms of my safe EGTs, and ideal AFRs?
