DSM guys have explored the hell out of the platform and can generally tell you what your EGT should be given your mods, that's why they're able to "tune" using just EGT. We don't have that luxury. Don't cheap out, get the AFR meter (I recommend Zeitronix- customer service emailed me back on a Sunday!!). I use the AFR to get, well, the AFR and the EGT gauge to determine how much I can advance timing (more advanced=more heat).
I'm not saying that you need only the EGT... that is definately not true. You need it all if you're gonna self tune or play around on your own.
But even if you have a wideband you could still tune for good AFR and have pinging. Thus a good piggy or standalone that can control timing is needed. However for driveability you will want an OBD-2 reader to get fuel trims happy. Of course if your standalone then you tune for that but a piggy needs to use this item to get things happy. Also to see where timing is at during boost, midrange, low rpms.
The EGT is just another way of combining info to ensure safety and reliability. Same could be said about an Intake temp gauge. Some guys use them as well to see if there intake charge is pushing the limits. All these things will add up to some cash but will allow you the most effective self tune if used together.
If you tune on the dyno via a professional then you don't need most of these. Maybe just a good AFR gauge,wideband to show you that your staying within your dyno'd parameters.

So with a packaged kit like RRMs turbo or the SDS Supercharger would it be safe to say that you could run their recommended boost levels and not require you to do any other tuning?

that is correct. both kits come with pretuned boxes, so no outside tuning is recquired at all. just plug everything in and install everything and you are good to go.
Greenphsyco didn't have anything bad to say? 
Just kidding... I will add that one nice benefit of the RRM is that you'll get the software with it to do custom tuning if you'd like later on. It will also come with the base maps. RRM is releasing the software as of the 1st of the month {thumbup)
