SCCA, NASA, BMWCCA and Audi Clubs are my favorites. They all do autcrosses and track days.

SCCA, NASA and BMWCCA also have club racing programs.

I agree. SCCA and NASA are my favorites, and I have heard great things about BMWCCA just haven't been to any of their events myself.

As far as I know, every SCCA sanctioned track event requires a roll cage be present in the car. If that is not an option for you... There are other clubs which hold track events without requiring roll cages. You have to be the judge of whether you are comfortable taking to the track without a roll cage. Note that unplanned off-road excursions do happen fairly regularly at track events.

For SCCA motorsports, without a roll cage, you have Solo II autocross, Solo Trials (not very widespread), or RallyCross. Speeds in such events are supposed to be limited by course layout and design to no more than 60 - 80 MPH for a street-driven car. (40-45 MPH for RallyCross, which is run on grass, mud, or dirt...)

I don't know of many open track events hosted by SCCA, but their performance driving schools don't require a roll cage or bar. However, if you want some open track time, you don't have to be a member to do track events at www.redlinetrackevents.com www.racerfactory.com or www.digitalracer.com
That's with the thought that you might be from Carmel, Ca. but if you're in another state, there are other organizations as well.

Check out Mazda Driving Associates (if you are east coast) they have a very well organized weekends and you just need to bring your car and a long sleeve shirt.

The weekends normally run $320 for early registration. Look up the page for an event I have just posted up. I will be there!
