PCD: Last year's version
make sure you get the same level of protection for the driver and your instructor. in other words, don't just have a bucket seat with 6 points for you and an OEM seat and 3-points for your instructor. I wouldn't recommend harnesses either unless you plan on putting a rollbar in the car. No worries, Justin will set you straight.

Also i know you cannot use harness without a rollbar on track right?
My philosophy:
If you have a roll structure you need fixed-back seats.
If you have fixed-back seats you need 5/6-pt harnesses.
If you have 5/6-pt harnesses you need a roll structure.
See how that works?
That said, you can run fixed back seats and one of the DOT approved belts I linked above, I just wouldn't do that myself.
Like Marc said...you do need matching certifications for both seats and harnesses. That does not mean you must have the same seat on both sides, but if you get an FIA/SFI seat for the driver's side, you need an FIA/SFI approved seat on that passenger's side too. If you have 6-pt harnesses for the driver...you need them for the passenger too.
There are some harnesses that are DOT approved and designed to be used without a roll structure or fixed-back seat (look at the Schroth Rallye belts)..however, some sanctioning bodies do not allow them anyway (which is really stupid).

Seems like the best seat advice is to stay as stock as possible until ready to make a big purchase of a roll bar, two seats, and two sets of harnesses. I'll be staying with stock seating for hopefully a season or two and spend the money on track time and consumables.
