My favourite track is Mosport Big Track... but that can be pricey to do... except for the JRP day... but JRP does track days during the week. The last one I went to was on a Friday.
I'd say since we're just out for fun... Cayuga is the easiest one to get too.

OK Im just trying to get some pricing on the track rentals
Im guessing Mosports Big Track, is around 7k on a week day,,, so If you were all interested We would need 40cars to be there and a rough guess of $150 per person give or take
I dont mind STis to be there, we are all the same and just want to go to have fun!!
Its tough to get a bunch of Evo guys to say "Ya I want to join this track day" but then come down to the last min and back out, thats Why Isaid Evo's & Sti's, we will have spots and once ppl pay they will hold that spot, kinda like a first come first serve, that way I dont get ***ed lol
I run a hockey summer/winter team and know what its like when ppl back out or play half the season then when they must pay, they stop showing up! Thats what happend to me on the summer team,, now for winter I said who ever pays first plays! and Im all paid up for the winter team already!!!! So first come first serve is the best way to play!

Dont forget about EMS/Ambulance that has to be there as well. And if you need any volunteers to be corner marshalls, etc.
