The other reason was that our liquid to air IC was only rated to 700whp and we were making over 900 on it.

Fair enough.I can see the Getting/Adding ice to be a PITA but have you found that AIT are much different (better/worse).
I would have to assume the water does a much better job because the car doesnt need AIR at low speed, whilst the air to air does? Whilst the AIR to AIR probably does a better job up top where its not acting as a heatsink but actively getting more and more air blowing through it?
The gains from the Air to Air at speed (2nd 1/4 mile) out weighs the losses?
