I noticed that the mapping parameters for Boost go up to a load of 100. On the other hand Crank, MAF, and Knock only have load points up to 95. Is there a reason for this and is it ok if I added a load point of 100 to those 3 and copy the figures from load point of 95 into 100 respectively?

It really doesn't matter because a stock turbo'd EVO will max out at just 45-55% load. Anything above that on the load axis just goes unused. I left a bit of overhead for bigger turbos and high boost. Heck, even the GT3037 running at 30psi only saw 78-80% load.
