Recalibrating the sensor seems like a good solution at least until you can get the perfect one.
I only worry about recalibration if this thermostat fails, and not having a good CT in logs.

just adjust your log formula to subtract what ever you have added in

Fuel Trims are slightly negative, but AFR a lot leaner at wot than in Fuel Map
