Aftermarket steering wheel Evo X

How much smaller are the aftermarket steering wheels compared to the Stock Evo X steering wheel?

deppends what you buy... there are sizes. you can by bigger ans smaller one too. Smaller makes the car more "nervous" at high speed , bigger ones makes the car "less responsive" at slow speed. Compere to the stock size.
Your choice.

Or you can have someone shave the stock wheel.
Have a guy that can do that, plus shape it with carbon fiber or Kevlar.

Ever thought about seat lowering rails. Might be a little better of a solution. Just my 2 cents.

I have a status ring seat on a planted seat mount no sliders. Can't get much lower.

In addition to the diameter of the wheel you will want to kno what dish you want for how you like the wheel. Add in the quick release, either short hub or long and you can add quite a bit of distance on the wheel. Its good to know exactly where you want your steering wheel.

I would want the steering wheel to stay in the same spot as OEM just smaller diameter. So my best bet will probably be calling up some manufacturer's and seeing what would be the best wheel/hub combo.

You could try a wheel with that has a flat bottom; I had one in my race car and I could get out of the car if I needed to without using the quick release

I'm not so sure about a flat-bottom wheel when the driver's knees are hitting. If he ever needs to save the car with lots of counter-steer, his knee could block this and cost him the car.

I'd love to hear more about "shaving" a steering wheel. That's a new one to me.

Exactly what i was thinking. Im not gonna shave the stocker either rather sell it. I should be fine with a smaller steering diameter wheel.
