Damn it looks very very good but couldn't you have ran a lil more of a strech on the tires? What size tires are those and what brand? The reason I ask is because certain tires strech better than others and some have rolled edges and some are square.

This is what I use to figure out my offsets and wheel size and then I figure out the tires after:

the rims are 9.5 +28 with 235 40 tires
pirelli p zero tyres on the front and yokohama advan on the rears
oh yeah, and according to the website you posted, my tyres stick out 50mm from original hehe

That's a nice set up. I was looking into almost the same size and offset but what I was going to do was a 18x9.5 +25 with 235 30. The Pirelli P zeros strech pretty good but I was going to go with the Yokohama S drives or something similar because they are more rounded and strech really good. I had them on my last set up when I had my G35 and they never gave me any issues and I had a way more of a strech than what I'm looking into.
Either way bro, Your car looks really really good. I think is the best looking Sportback out there right now. Good job so far. What's next on the list for it?

Do you want to roll your fenders or not touch them at all? The reason I ask is because if you don't want to roll your fenders then stick to the stock size, width, and offset that way you know that they'll fit. Here's a guide on what that is:

What I'm trying to do with my car is something a lil more aggressive that what's one there so I'm going to have to measure everything and go to my buddy's wheel shop and test fit a lot of stuff so it's going to take me a while to get the finished product but hopefully that helped you out a lil bit.

Either one of those tires should fit no problem but how wide of a rim are you wanting to run? it all depends on how wide of a rim you want to run. Also you have to think about the clearence on the inside. If you run too wide of a rim with out the right offset then it might hit your strut. The best thing I can tell you is measure everything and if you have a rimshop near your house then see if they will let you test fit some on your car because .5 inches could be the difference between fitting and not fitting.
