Launch ruined my day :(
Well, either the clutch slipped or you spun your tires. You didn't do both. Since the clutch smelled, and the rpms went up to 7k without really moving, I'd say you just fried your clutch. If your wheels were spinning, then that means the clutch was grabbing completely.
Anyway, welcome to the world of newbie-trying-to-launch-an-awd-with-too-much-slip-on-a-stock-clutch-with-the-restrictor-valve-still-installed (Mitsu did that on purpose just for you).

It's the one that we've been talking about for 3+ years in tons of threads.
Mitsu installed it because of people like Panges who go out and try to launch with no experience on their 30k Evo so that they don't blow the t-case. Instead, it causes late and weak engagement of the clutch, which causes slipping, which causes heat, which causes the clutch to go out well before damaging any drivetrain components. Since the clutch is a wear item and not covered by warranty, then Mitsu saves tons of money.

you are a silly rabbit. Honestly, wouldnt you just rather bog the launch instead of KILLING your car. work UP the the revs, and learn your car rather than jumping out and dropping the clutch 5.5k with out any descretion. c'mon now, you paid for the car, put your money where your mouth is and become and enthusiast before you become an enthusiast know what I mean?

besides drag race launches, does removing this restrictor help with daily driving or road course driving?
I'm not intrested in launching but if it'll somehow improve the feel of the clutch I'd might want to do this mod

Panges, we refer to it as the "clutch restrictor." Doing an advanced search for those words will get you lots of results. No, do NOT start at 4k. You cannot launch at 4k without a ton of slipping, which is what burned your clutch to begin with. No, do NOT let the clutch out slower. That's EXACTLY why you burned it! You gave more gas than clutch, it overpowered the clutch, then you didn't move. You got it all backwards. You should probably just not launch.
Lagcisco, yes, removing the restrictor is VERY VALUABLE for daily driving and circuit racing. With the restrictor, you clutch doesn't engage right away - it's delayed. So, you think you're working the clutch pedal at a certain speed, but the actual engagement is much slower. It sucks. The downside is if you drive like a tool or do big clutch dumps, because then you'll kill the t-case.

For one, I would rather glaze a clutch disk a little than damage my transfer case - but I'm not foolish enough to go out and *practice* launching for no real reason. My EVO has 23k on the odo with the stock clutch and it is still holding strong. I just don't abuse it.
Well... I went out and tried ONE LAST TIME today. This time at 5k and did a quicker clutch release with a tiny bit of slip and holy hell, it was fun. Afterwards, I smelled a tiny bit of burnt clutch, but not anywhere near as bad as yesterday. Anyways, i'm done launching.. jus had to see what the big deal was and i did.
