till what boost level are evo8's 560 injectors good ?
meaning, with standart E8 turbo, wallbro and reguar petrol (not E85)
can they handle 1.5-1.7 bar staying within 90% duty cycle ?

Boost isn't really the best way to judge when you need to move injectors since you could be running 30psi at 3500rpm be fine (injector wise) but then at 30psi at 6500rpm now the injectors are inadequate.
That being said with the mods above you should be fine. Note that the stock E8 turbo isn't going to be able to hold that boost up top.

what about 2.3 stroker with 272 cams ? or it's not displacement dependent ?
forgot to mention, talking about 10.5 hotside turbo if it matters

Stock injectors are capable of supplying enough fuel for low 10.x AFR with all the air stock EvoIX turbo can supply up top. So I guess it is quite enough to feel safe. 
And this is not dependent on displacement or cams, it only depends on how much air can the turbo push and how much fuel can injectors deliver.

Basically, any turbo only flows a certain amount of air efficiently. So if you want to hold that amount of air efficiently up top get a bigger turbo.

The turbo will probably hold boost less up top on a stroked motor since you are asking it to pressurized larger volume of air. Stock injectors can support up to 330whp (Mustang Dyno)/375whp(Dynojet) when maxed out with all of the supporting mods, generally with a IX turbo at that. That's about the most you'll get from those injectors at 100%IDC so you can guesstimate your power levels at a lower IDC from that.
