So thanks to all (esp NoTec) - now need to mount my sub box...
Thanks to everyone from this thread that helped me pick my system - especially NoTec and adambl03 - for steering me in the right direction.
Now I've got the carpet glued to the MDF board in the trunk, I need to think of how to secure the box. It's pretty heavy-duty MDF:

I put some velcro on the bottom, but it can still tip during a cornering maneuver. It's too wide to fit perfectly in the well where you fill the washer fluid, so I'm trying to think of a way to secure it from tipping.
I had the idea of some type of plastic tether that I could somehow attach to the box and the trunk, but I figured you experts with tons of experience could come up with a better idea. If I had done this before, I'd probably have made sure the installers did something like this, but I messed up and asked them not to secure it.
So if you guys have any suggestions, this noob stereo owner would greatly appreciate it.

I wouldn't waste time (Hey I'm not hatin'), unless this is a temporary fix. I would just buy one of those fiberglass boxes from "MconsoliA4's" shop. I've been there and done what you're about to do, and then I just ripped it all out because it just looked "lame." After seeing how things look with the fiberglass box, nothing else looks right. Okay I'm done with that. If you want to mount the box, you can get a piece of 1/4" MDF to fit under the carpet, attach it the where you have the sub and then attach the sub to it.

Even that fiberglass enclosure has to be fastened down.....
I would put that box on the other side if you are planning on fastening it down because of the washer fluid reservoir. The other side has a little door thing, open that and you can see some cross bracing, I mounted a small pipe clamp to the back of the enclosure and tie wrapped it to to the brace so it wouldn't tip over but if I need to remove it I can snip the tie wrap and unplug the wire. Hope this heps.

EVO6MR has probably your best option if you don't want to go the route of macster (which is also a good option just more money). You could always drill holes in the floor and use mounting brackets. But I doubt you really want to drill holes in the floor. Where is the ideal place you would like the box to sit? And which way would you want the sub to point? Most installers would tell you the best place to put the box would be up against the back seat with the sub facing the back of the car. But, it looks like you have your amps mounted on the back seat (which is a great location by the way). Give us some more info and I think we'll all be able to help you a little better.
No need to thank me for advice. Sometimes, salesman want to sell you what is best for them rather than the best solution for you. You should be able to get good unbiased info from an outside source. I guess thats why we are an enthusiast network. I'll try to get some updated pics of my trunk for you later on today. I keep a cleaning kit in a storage bin in my trunk and because it uses velcro at the bottom, it also pulled the carpet all over the place. I went to Lowes (Home Depot sells them too) and purchased L shaped aluminum strips. I drilled 3 holes in each strip and secured it with screws through the carpet to the board. I originally purchased these to prevent my last enclosure from sliding around and they also allowed for quick removal of the box. I also did not have to drill into the enclosure to keep it from tipping because they extended maybe .5 - 1 inch high. Who knows, they may work for you.

EV06MR, has a great simple way to do it.
You can also do what NoTec said and get the tiny l brackets. Then just put a couple on the back side where you can still reach them and no one else will see them. It may cost you about $5, but this is probably the easiset way until you get the FG box.
