Car idle problem *HELP*

Okay i just put back on my valve cover after getting it powdercoated and i also re-routed my throttle cable under the strut bar. Now i started the car and it idled fine till it was fully warmed up and right after i gave it a little gas the idle was stumble as if it were choking. It wouldnt stop doing it and almost shuts off. Whats my problem?

I have this problem when I'm on a hill and give it gas and then release the gas and press down on the clutch. I have to be rolling and putting just a small load on the car like going over a speed bump. I don't put on the brakes so it's not the brake booster putting a load on the car. It will stall and almost die and if I have the A/C on, it will die. It only does this on a steep incline.

I'm suspecting it could be the MAF being inaccurate at an angle, or something fuel related.

If a vaccum leak exists, wouldn't you find it with low boost and flaky idle ALL the time?
