When I go to start up my car in the mornings or after its been sitting for a couple hours it bounces from 1000 rpms to 2500 rpms for 30 seconds and then smooths out and idles perfect right under 1000 rpms. I checked leaks in my vaccum lines and could not find any. Anyone have any input on this issue?

It could probably be smoothed out with tuning but simply its the time the car is guessing at the fuel content since the o2 sensor is warming up still. Once the o2 sensor warms up the car will normalize out.
