Although I do not have any personal experience with an 03-04 open diff evo, I'd imagine it will still perform like a champ.
My car wearing its snowshoes is a beast to say the least Granted it does not have any open diffs however in comparison several suv's on the road these days are rocking an open diff and seem to do fine.
An LSD will definitely help increase traction however in the end a good set of snow tires will go a long way regardless of whether you have an open diff or a limited slip.

Almost 130k on it's 6th winter on dedicated snow tires on the stockies. Never left me stuck anywhere. Hell I can't even remember and oh **** moment. EVO (with proper winter tires = Trouble free snow driving). Providing following proper driving techniques for said conditions of couse.
Watch the Ice though nothing short of metal studs or tank tracks will help you there

Pretty much any car with snow tires and a good driver mod will perform quite well in the snow. Even my civic and crx with snow tires are amazing cars in the harsh Minnesota winters. I find myself driving 65-75mph anywhere I go on ice and deep snow, passing big trucks left and right.
