Throw out bearing recommendation.

What do you guys recommend for a throw out bearing or what is typically used for an Exedy twin disc clutch setup

Oem or exedy since exedy makes the oem one. That and do yourself a favor and get the act monoloc. You can get a STM clutch fork stop just for the extra peace of mind but haven't heard any problems with the monoloc yet. That's the setup I run on my twin and I haven't had any issues since I installed it this June.
