AMSOIL 20w50 during winter?

So I built my engine and I'm currently using 20w50 oil. I'm doing an oil change and I'm not sure what weight I should go with with the temperature about to turn.

AMSOIL Z-Rod 20w50 has a -40F pour point which sounds pretty good but is that number safe to go on?

I'm thinking perhaps I should go with their Signature series 0w40 or 5w50.

What tolerances is your engine built to that it needs 20w50 in the first place?
