What gauge is next most important???

Well if you are going to mod your car .. change a/f ratio's, bolt ons - get a Exhaust temperature gauge. It's a nice precise way to tell if your motor is running rich or lean. You can search for a "Pryometer Gauage" and you'll find one

My suggestion would be EGT, then oil pressure, and fuel pressure.
A/F gauge although a good safety net won't tell you much more than an EGT gauge since a non-wide band O2 sensor isn't very accurate. If your willing to spend the money, wideband O2 will give you a pretty accurate reading of A/F and is a good tuning tool.

Get an oil temp gauge.
The egt will tell you if you are running rich / lean.
But since you are on stock programming, I'd say get oil temp. That will tell you when you can beat on your car, since the coolant warms way before the oil does. While you don't even really need a gauge, if you really want one, get one that you can actually use.
If you have the EGT probe in one of the runners, maybe 2-3 inches from the head, at what temperature are things starting to get dangerous? Does it make any difference that I have forged pistons?
