Bone stock EVO, am I the only one?
I'm 28, nearly 2 years and 28k miles later and I'm still stock. Love every minute of it, and even stock I'm still competitve whenever I auto-x. Your logic pattern is the same as mine for keeping it that way.
I'm 28, had the EVO for 2 years and 67k miles, most of thoes miles have been stock. I needed my car for business purposes so reliablity was important. Only things I did were K&N panel filter and MBC, both very easliy removable for servicing at the dealer.
Currently I just installed a TBE and ECUFlash though, since my driving requirements for work have been cut down.
Don't worry about being stock, learn to use all the power you have first before you start modding and it will payoff in the end if/when you are ready to mod.

In a stock form:
It accelerates faster that most cars on the road.
It handles better than most people can handle.
It stops short of poping your eye ***** out of their socket.
5 years 50k mile warrantee.
All for around 30K
What else can you ask for?
Call me crazy, but I don’t see a need to fix unbroken thing.

There is something to be said about being stock, I think! You bring up a good point about our cars being stock are better than 80% of the cars on the market for this pricepoint. But there is something to be said about driving a 500 wheel horse power evo around that makes you kind of laugh inside! Viper pulls up next to you and you can just kind of laugh at him and he gets that worried look in his eyes?! It's beautiful!
Drive it however you want to drive it, it's still an evo and to be respected in either form.

It does seem like you are looking for props for not modding your Evo. Getting 100 hp over stock with basic mods is reason enough for me, but do what you want. But I do agree with you that it's about time we started getting some cars in the US that are "modded" from the factory.

On the the other hand, the first time I got my world kicked over by a turbo S2000, it was ON.
I havent been able to resist the need to go faster and faster, only my wallet has.
DO as you please. Stock is great, but faster and quicker is what an Evo should be.
good for you guys that are still stock. but you are missing out alot more fun from the car, at least try a test pipe and a mail flash for it, the car will luv you for removing that cat.
