They handled at 0.92g right off the showroom floor. It's a shame the F-Body didn't have an IRS setup. I wouldn't mind doing an IROC build, but removing the V8 and putting in the 3.8 from the Grand National. That would make for one Hell of an awesome ride, and probably make it handle even better because the V6 probably weighs less than the V8.
Downfalls are that it doesn't have AWD, but at least it has RWD, it wouldn't be as light as the Evo, the interior space of the Evo, or as good of a manual transmission. Not to mention, I think the Evo has pretty timeless looks, while the IROC is surely dated looking.

You're confusing grip with handling. The IROCs could generate a lot of grip by the virtue of their tires, but they handled like tractors.
I can't imagine the handling of the IROC is any worse. The ones I've driven have been pretty decent.
