04 Evo 8 with 2k miles, should i keep it under the cover or drive it ?
drive it when you feel like it, if its only every so often and not very far so be it.
my mom has a 98 mustang gt convertable that only has 3k miles on it so your not crazy to keep it in the garage and only drive it rarely.

I used to believe in the "don't drive it to save it" idea, but it's a waste to have a car sit when it's supposed to be driven. If the OP wants to do that, more power to him.
You have an 08 WRX and a 10 A5. If you aren't in to racing really, keep the Evo in the garage. You obviously don't need any money. If you are in to racing. Build the **** out of the Evo and race it. The WRX and A5 are plenty for your DD needs. And personally, especially if you did the S-line body work. The A5 is plenty beautiful to look at.
If I were in your shoes I'd have the Evo track prepped, and the WRX and A5 sold for a new S4 or something similar. (high end fast luxury)
I say drive cars like there ment to be driven. Although, I might keep your Evo like it is as it is and will be a great classic.
Edit: If that is your Evo with the body work you should sell it! It would be better off owned by someone else.

I thought I was bad dude! I have an 03 with 43k on it now. I bought it over a year ago with almost 40k and have only put a little over 3k on it. 1500 of that was a trip to get my clutch put in and a tune haha. Now when people say why don't you drive your car are you scared....I'm gonna say there's an 04 evo with 2k on it sitting in someones garage right now. I drive mine more than he drives his haha.
