Another update, sort of lol.
I'm not entirely sure with what I'm looking at regarding the timing. One of my buddies is going to swing by and take a look more than likely tonight or tomorrow. Until then, my dad has a guy who he works with that has a fuel pressure gauge. We're going to look into that as well.

Finally got a chance to look at the car again last night. The fuel pump didn't seem to be kicking on, couldn't hear to feel it kick on. I'm hoping this will be the answer, replacing tonight once I pick up the new one.

Check your maf sensor and also the wires connecting to it. My old 240sx used to have this problem. If water got into your intake it could hydro lock you but the car would've had to be on to suck up water. Also check for boost leaks and seals around your intake system.

What's interesting, is I plugged my relay Back in. Car basically fired right back up.. no running issues or anything. Because of previous cars, this is not completely settling to me, there's probably more than I'm not seeing. I'll still buy a new relay, and just keep a close eye on everything. Just odd, and I can't explain why it started again lol.
