How to empty the radiator?

Would like to know how to empty the fluid in the radiator, easy way would be just to pull off the rad hose and let it dump it all over , but that would be a little messy so whats the best way. Also how much fluid would it take to fill it?
thanks

The plug only drains the rad. I'm not sure how to get to the fluid in the engine. My wife's Saturn has a bolt between the block and radiator, in addition to the plug on the rad. Might look for a suspicious bolt

Edit: I know the plug only drains the radiator itself. When I unplugged the plug on my Lancer only about 3 quarts of coolant came out. My wife's car had closer to two gallons.
