and don't take the picture of my car as a reference that's the day I bought it

I currently run a rpf1 in 17x9.5+38 on 255 tires. I honestly can't stand most of the stance scene but I also hate stock looking Evos gap wise. I'm currently running about a fingers gap and a half from fender to tire, I have my car setup more for function. But I appreciate well done Evos, just not over the top. As far as handling I was referring more to the fact that the roll center gets changed.

Completely stock body. I just folded up the lip in the rear fender well.

with that setup what I would do is buy some BAD *** tires nt01's or r888's or falken azenis and imo f "fitment" or "stance" sure if you like the "low" look then you can still be low but mount some bad *** tires don't stretch just lower your evo a bit and show off your tires and wheels. it would benefit both worlds function and form
and you can always do extended studs and put some spacers on to get it perfect you don't need to be a mm from your tire to be "stanced or fitted" you just got to be creative
