I agree with those who are advising you to take the car to the track while stock first. I did all but my last track day stock, and what you learn about the car in that state is important.
As for lowering, I'd recomend a decent set of coilovers and keeping the amount droped equal at all 4 corners to maintain the stock balance - at least to begin with.
As for which coilovers; I'd personally not recomend the JICs unless you are looking for a MUCH stiffer suspension - I love mine, but they can't even really be compared to stock. The Tein Flex set-up is supposed to be somewhere betwenn the JICs and a stock suspension. If you want something really close to stock the Tein "SS" coilovers might be good. I rode in a car with them and that felt very close to stock, but I think it had less body roll.
