What do you think?

I have the ETS V2 Catback Exhaust, a Fast Intentions Resonated Test Pipe (apparently was put on the car before I bought it), Stock Intake and a Cobb OTS Stage 1.
So my questions is...do you think it is safe to run Stage 1 or should I jump to Stage 2?
As much as I love the AP...sometimes the thing drives me crazy because I never quite know...guess that is the newb in me coming out.

Hoestly a protuen would be the best way to go. Cobb maps are good but having something specific to your car is the best

Why don't you run it and see if you knock? ....or ask Cobb.

IMHO all Cobb maps are tuned rather conservatively. Get the Race Tuner software and have it professionally tuned. On my wife's Mazda, Cobb told me to put the car on the dyno, load maps, and see which one performed better. Turned out even though she had all the mods specified in the Stage 2 tune, the Stage 1 produced better numbers all the way around. Since then I have race tuned it w/ much better results. Just my $0.02

interesting...

but yeh best bet is to dyno tune it...

or at least road tune with "virtual dyno room" - get two logs from stage1 and stage2 (same road/same conditions/same pull method) and see for your self..
