People normally upgrade the fuel pump before going to bigger injectors. but this is just planning for the future. I would upgrade the fuel pump to an Aeromotive 340 drop in kit and possibly get some 1100+ cc injectors and go E85. you would get a nice gain with a good tune and still be reliable. And that would be really fun on the stock turbo until you get used to it and get bored, then you want to go big on the turbo.

Second, congrats on the Evo. You must have a good, committed girlfriend to be as generous as to buy you an Evo, that is very cool of her.
Third, if your overall goal is mid 12's, you will be fine with stock injectors. You will need your basic first round of bolt-ons (intake, full turboback exhaust, intercooler pipes and larger fmic) and a good tune and you will have your mid 12s or better. I was suprised how easy 12's were in my Evo IX compared to other cars I have had (WRX, SRT-4, built 5.0 Mustang etc...).

I have the FMIC and pipes on the way, going to try and find a full exhaust, now turbo back vs. header back? Does a header make that much of a difference on a stock turbo?

I wouldn't worry about an exhaust mannifold, a.k.a. headers yet. Mid 12's should be quite easy. And make sure the downpipe that you get is a downpipe/O2. Look at ETS's, AMS's, and MAP's to see what I mean..
