Hi all,
I am not sure if this is normal behavior.
When my aircon is on, my temps stay fairly constant as follows:
water temp: 82°C
Oil Temp: 82°C
However, when I off the AC, the temps are
water temp: fluctuates between 80 to 93°C
Oil temp: fluctuates between 80 to 87°C
I know that the fan will kick in later when the AC is off, but will the huge fluctuation in water temp damage the radiator in a long run? or is that normal behavior that I should not be concerned about?

Normal behavior and don't be concerned.
The AC on turns on the radiator fans in order to supply airflow across the condenser. This also means plenty of airflow across the radiator as well, and so your temps hold at the designed temperature controlled by the thermostat.
When the AC is off, the the thermostat still opens at ~82 degrees or so, but if you aren't driving fast enough to have natural airflow through the radiator, the temps will still climb. This is perfectly acceptable and fine though, and is designed this way. Once the temps get to the designed upper limit though, then the ecu kicks on the radiator fans which will quickly cool it back down.
