1 or 2 subs?
ah yes...good points. sometimes i just assume that everyone just listens to dance music. but yes, the smaller the sub, the better response because you have less surface area/mass to move for each bass note. so if you listen to a lot of rock or other with mild bass....yes yannotmi you are correct you want a smaller sub. bigger subs are gonna be a little sloppier, but can usually handle more power and pump a bigger volume of air=louder.
the trick is, however, that not all small subs can't be loud. you can get a 10" that outperforms a 12". there are many factors in deciding what sub to get. box design, wattage, efficiency (key factor that is overlooked!), weight, etc....
but to be honesty, if you have to ask questions about it, chances are you aren't that much of an audiophile anyway, and 1 12" sub with enough power to your liking will do just fine.

If you want tight bass for punk/techno/ all that have fast passed basslines, go with two 10" and killer amp. The amp needs to be powerful because the bass are not far apart and therefore if you have a not so good amp, it won'T play the bass notes apart.
12" are in the middle, but if you listen to fast paced music, get a really, really good amp if you want it to sound right.
Since you have one 12 already, you can just get a really good amp and you should have a good all around setup.

A ported box usually needs less power from the amp compared to a sealed one. But the sound on a sealed is way tighter.

MrSpace is correct it really depends on what kind of music you like! I have 2 10" rockford's that play rock good (kind of over power the factory speakers to much) but it does take some good tweaking to get any settings right!
the more speakers ......the better!
10's if you like bass yet, you want good quality sound....if its the bass your after. Stick with either your 12' alpine, and get another.
