That little hose that connects to the side of the intake tube?
So, I was just curious...there is a little hose that connects to the side of the intake tube...what is that thing and what does it do? If it were somehow pinched or restricted in some way, could that restrict HP (or cause other issues)?

hes talking about the crankcase intake hose by the oil fill cap, not PCV. not sure exactly what its called. and no you should not cut off that air flow

The hose you are speaking of is technically part of the PCV system. It supplies the crankcase with filtered air that mixes with the blow-by and then is re-introduced through the PCV valve into the intake manifold at high engine load situations.
So no don't remove that hose or pinch it.
