One little suggestion: all the stuff about trying to mount the tires, etc, is a distraction and does not help your case at all. For example, if the shop tried to mount all four (without checking the tires before trying) and only then discovered the bad bead, then for all anyone knows, the shop messed up the bead when trying to mount the tire. But, as I said, that's not really relevant to your dispute if the seller said he'd buy them back and then disappeared.
