You sound new to driving.

Tip: Find the friction point. This meaning that you let go of your clutch pedal til you feel this shutter from the car. WHen you find that, that is the point of your clutch engaging to your flywheel which makes the car move but unless throttle is given... the car will stall. So slight give it some gas, especially if your in a turbo or powerful vehicle.

And also when driving up hills, it depends on the car, and how steep the hills we're talking about. Some cars have more torque than others so they need less effort. Cars take are revvy and don't have much torque needs to be on lower gears to pull it up hill.

But in general don't slip in 5th gear unless you have alot of speed to move up that hill.
