ECUFlash accel enrichment table not really accel enrichment?

Could someone explain how to tune the Accell enrichment tables that Bez found? I am sure this is a pretty important area a lot of people don't properly tune for.

I have a problem and I wonder if this is the right table to use to fix it. Basically, whenever I move off from a complete stop, the AFR will go very lean to around 18.0 for a second or two before richening up again. This causes the car to stumble badly and can be quite a problem especially when I'm stuck on a slope It only happens when I'm moving off from a complete stop...everywhere else is fine. Any idea?
