It sure is, but from what I've heard from other people, if the oil pressure drops to zero then you're f@cked by the time you notice it. My personal experience has not confirmed this since after building the engine I didn't realize how much it was going to leak, so it happened twice that it suddenly went to zero while driving on a steep hill to my house. Leakdown test passed, compression test passed, and no visible damage to pistons or chambers so it must've warned me in time as long as you take immediate action. Does anybody else have other anecdotal evidence?
Regardless, I believe it is a necessity to have an oil pressure gauge. I've seen many people at the army self-service auto garages forget to take the old rubber sealing ring off when changing oil filters and drive away oblivious that they just dumped every last drop of oil pulling out. IIR only one of them got away without any engine damage.

This is why peak/warning gauges are so nice because they "warn" you when OP drops below your pre-set limit and you do not need to be watching the gauge all the time.

The reason the cars water gauge will go up while the aftermarket is noticeably lower is doue to the sender placement. The stock water temp sensor is monitoring the coolant surrounding the cylinders. Once it reaches a certain tempurature that coolant is returned to the coolant tank via upper radiator hose (where the aftermarket sender is) and the gauge will increase. If you notice almost exactly when the car reaches its own idling temp(via stock gauge) the other gauge will begin to increase.
Stock gauge is much more accurate than you think. Why would a company spend millions in engineering a car(especially one made to run at high RPM's like the Evo) and leave it with a sh*tty water gauge?
Oil Temp gauge is important as well but more so if you plan to race your car. If its just on the streets, I'd stay with water

If you use the 42 Draft unit (as I have, and it is worth it!), it places the sender after the thermostat. The aftermarket gauge will not see the actual temperature of the coolant until the thermostat opens. When does that happen? After the car is warmed up. So yes, an aftermarket gauge is useless until the thermostat is opened. However, once it is opened, it will give tell you how hot you are when you really care, not while the car is warming up, but while you are cruising, making pulls, etc. The stock gauge is useless if you are overheating. It will start to move after you are overheating. By that time, you are in danger of warping the head. Hope this makes sense...
