Upgrading to IX turbo this weekend
This is the first time I've done this, so honestly how difficult is this process.
I know what I need to do, just want to see how long it took to do this from start to finish...
Also any tips besides to use pb blaster and anti-seize on everything?

What JakeTheVIII says is great advice. Also spraying PB Blaster as you mentioned will help you loosen those nuts and bolts without snapping them off. I would also check the torque on the nuts and bolts for the next couple of days after you've finished.
PB BLaster is your friend.
It's not all that bad. Just take your time. Removing the radiator is recommended, but I personally don't think it's nessacery. I installed my o2 housing without removing it, but it would have been A LOT easier had I removed it. Same goes for a turbo install.
It maybe a little time consuming if it's your first time, but again, it's pretty straight foward.

Re:
Nice...Good lookin out on the tips guys...
I searched around on the forum for a specific "how to" on my turbo swap but didnt really find anything in real good detail.
I just want to make sure that I don't miss anything when it comes to doing this.

Ohh, and I'm not sure what you were planning to do, but just to make it easier, keep the o2 housing on the turbo before you pull it out. Pulling the o2 housing off the turbo while it's still in the car would be take a lot more wasted effort when you can just swap it to the new turbo once the turbo is out of the car. Don't forget the remove the downpipe (obviously) and if the o2 housing is stock, there's a little bracket holding the o2 housing to the block.

If you choose not to remove the radiator, put a big piece of cardboard over the fins so you dont damage them (or your knuckles) if you do slip.
If you do remove the radiator, you can usually reuse the antifreeze if you drain into a clean container.....of course this just makes an excellent time to replace it with fresh fluid anyway.

You have the install kit, or the equivalent bits and pieces(oil & coolant lines as well as the J-Pipe), right? Also, you may want to have spare(new) gaskets for the oil and coolant lines, as you don`t want to need one on Sunday when the dealership is closed.
