I had a cooling issue temp gauge would sky rocket in hard acceleration when I let off the gas it would settle back to normal in about 30 seconds. fan would also come on all the time.... I put a new thermostat in and problem solved! I feelt very lucky! if you have no radiator leaks and you replaced your thermostat and still getting the same problem it sounds like your next step would be a compression test. you also might wanna try and drain and replace the fluid... could be air bubbles good luck hope this helps!

Well, the OEM fan is multi speed and has a controller that sits right beside it. First the fan or fans need to run and second the OEM fans will move more air than any aftermarket fans I am aware of.
